Day 1 Depart Hobart
Board your Coral Expeditions small ship at Hobart’s Princes Wharf at 4pm where there is time to settle into your stateroom before our 5pm departure. Take time to acquaint yourself with the facilities before meeting your fellow travellers, the captain and crew at the Captain’s Welcome Drinks. The captain and expedition team will make daily itinerary decisions to maximise the guest experience and take advantage of opportunities opened by the weather. There will be a daily briefing onboard to advise guests on the day’s activities. The expedition will visit Port Davey and Bathurst Harbour, conditions permitting. We always aim to visit these beautiful destinations, but if we are not able to enter, an alternative destination more appropriate to the weather conditions will be chosen by the captain. Tour begins 5:00 PM. Welcome to Adelaide, the laidback capital city of South Australia, and gateway to Barossa Valley wine country. A transfer is included from Adelaide Airport to Sofitel Adelaide in the heart of the city. Join us tonight for a welcome reception and dinner.

Day 2 Barossa Valley Wine Country
Begin the day with a drive to Barossa Valley, Australia's premier wine region, a landscape of flatlands, creeks, and lush rolling hills, where you'll spend the day with a "local." Visit a winery for a tasting; after lunch, attend a "Your Moment in History" tasting at a winery where you can taste a vintage port from a special year in your life. Visit Vasse Virgin for an olive oil masterclass, then return late afternoon to Adelaide where you'll spend the evening as you please.

Day 3 Adelaide Sightseeing Choices
Begin the day by exploring Adelaide's Central Market, one of the largest food emporiums in the Southern Hemisphere; 80 stalls offer a dazzling array of mouth-watering local produce, from vegetables to seafood, olive oils, artisan cheeses and baked goods, where you'll taste and explore with a local guide and enjoy free time on your own. This afternoon, you'll have a choice: a walk and a climb on the roof of the Adelaide Oval sports stadium, some 50 meters above the stadium's green turf, for spectacular views of the city and its landscapes; or, alternatively, an art tour showcasing the art collection at the Sofitel Adelaide – original art pieces capturing the brand's French origins, and taking inspiration from its South Australian heritage and surrounds – followed by afternoon tea. Tonight, enjoy a dine-around at your choice from among several select Adelaide restaurants, all within walking distance of your hotel.

Day 4 The Fleurieu Peninsula
Head for the Fleurieu Peninsula south of Adelaide today for views of the spectacular Onkaparinga Gorge from Punchbowl Lookout and an off-road adventure through Onkaparinga River National Park. After lunch, enjoy an incredibly scenic drive along the peninsula coast past Sellicks Beach, Maslin Beach and other shoreline communities back to Adelaide for an evening spent as you please.

Day 5 Discovering Melbourne
A morning flight takes you from Adelaide to Melbourne, the coastal capital of Victoria; where you'll take a guided walking tour along Melbourne's famous laneways and cobbled side streets; discover street art, arcades, cafes and small shops that give the city its intimate charm and character (and of course, its famous coffee). Check into your regal 5-star hotel in Parliament Square, overlooking St. Patrick's Cathedral and Fitzroy Gardens. The evening is at your leisure.

Day 6 The Great Ocean Road & the 12 Apostles
Drive from Melbourne to Port Campbell along the Great Ocean Road, one of the world's great scenic drives, with stops along the way. At Port Campbell, the otherworldly, towering array of limestone stacks known as the Twelve Apostles, rising from the sea along the shore, will leave you awestruck; you'll also explore Shipwreck Coast and the Gibson Steps. After lunch at Apollo Bay, return to your hotel in Melbourne for dinner this evening.

Day 7 Continue on to Tasmania
After flying this morning from Melbourne to Hobart, Tasmania, drive along the Freycinet Peninsula. Continue to your home for the next two nights, Saffire Freycinet. One of Australia's premier luxury lodges, Saffire is spectacularly set adjacent to Freycinet National Park and Wineglass Bay; it overlooks Tasmania's Great Oyster Bay, where migrating whales and dolphins come to play, and its rooms enjoy views of the pink-hued granite Hazards Mountains. Day 8 Choices in Freycinet National Park
You'll have a host of activities to choose from in or around Freycinet National Park from your Saffire resort today. Choices include a guided Lookout Walk along Wineglass Bay; a beekeeping experience; visits to a marine oyster farm or a local vineyard; a kayaking and birdwatching excursion; cooking or mixology demonstrations; or a Tasmanian Devil Experience. You can also enjoy archery, paddle boarding, mountain biking or fishing at the resort (some at an additional charge). After lunch at the lodge, spend the afternoon enjoying activities or free time; have dinner at your leisure this evening at the resort.

Day 9 Hobart and Art
This morning, depart Saffire Freycinet and travel to Curringa Farm, a working sheep farm overlooking picturesque Lake Meadowbank. The farm is 750 acres in size, and runs up to 3000 sheep for meat and wool; 12 % of the farm is under conservation with lovely forest areas; it is home to native birds, plants and animals. Get an insiders' view of what sheep farming is all about, have lunch, and then drive to Hobart, nestled beside the Derwent Estuary at the foot of Mount Wellington. Established as a penal colony in 1804, Hobart today is a city of hip contemporary art and culture, its historic waterfront lined with old pubs, new cafes, galleries, museums, and award-winning restaurants. Dine at leisure at your hotel tonight.

Day 10 Historic Port Arthur & a Cruise
Separated from Tasmania by a narrow neck of land, the prison at Port Arthur was built in the 19th century to house hardened criminals sent from Britain. The historic remains of its more than 30 buildings, including the gothic-style church (built by convicts), are now an open-air museum (part of a UNESCO World Heritage Site) where you'll take a guided tour, hear compelling stories, and learn about convict life there; you'll also take a cruise around the rocky islands and towering cliffs for a sense of why Port Arthur was believed to be "inescapable." Return to Hobart and dine tonight at your choice of a selection of local restaurants.

Day 11 Adventures on wild Bruny Island
Ride a ferry to Bruny Island (two land masses connected by a narrow spit of land) for a choice of wildlife-related activities. Embark on a Wilderness Cruise of the D'Entrecasteaux Channel for close-up looks at the spectacular sheer cliffs and rock islands and geologic wonders along the coast, including the craggy tower known as The Monument and the sea cave called Breathing Rock; the cliffs are home to gannets, pardalotes, shearwaters, swift parrots, sea eagles and falcons, while dolphins, seals and whales frequent the waters. Or, if you prefer to explore on dry land, head out on a Bruny Island Traveler Tour, exploring spectacular landscapes and gourmet local produce – a delicious day out where every course on the menu is a stop on the journey. You'll visit the home of Bruny Island cheese, oysters, fudge, honey, wine and whisky to savor their produce and hear stories behind the harvest. Throughout the day, you'll see incredible scenery; you can take a stroll on a deserted beach and keep an eye out for the rare white wallabies found on the island. Return to Hobart via ferry for a free evening on your own and dinner as you please.

Day 12 Bonorong and a Richmond Winery
Start the day with a drive from Hobart to Brighton for a private behind-the-scenes visit to Bonorong Wildlife Sanctuary, whose mission is rescuing and caring for indigenous animals and returning them to the Tasmanian wild; here you can meet Tasmanian devils, blue-tongued lizards, bettongs, koalas, and quolls, and animals that went extinct long ago in other parts of Australia. Next, visit Richmond, a charming village of Georgian architecture, famous as a destination for food and wine lovers, for time exploring on your own. Lunch – and of course a tasting – is at Puddleduck Vineyard, a boutique family-owned and operated vineyard and winery that was established in 1997. Return to Hobart for an afternoon and evening spent as you please; dine at leisure tonight at your hotel.
